The great pastry chef, chocolatier, ice cream maker and confectioner Roland Zanin transports us into his world of indulgence. After starting out in pastry making, he became passionate about chocolate making and set out in search of the best flavors: something to delight our taste buds!
My name is Roland Zanin, I am a pastry chef, chocolatier, ice cream maker, confectioner. I have 3 stores: in Cluses, in Fayet and in Sallanches where the laboratory is also located.
I am part of the Relais Dessert association, which brings together the world’s pastry elite.
The chocolate factory, an obvious choice
In this profession, you have to evolve in stages: I first started by making pastries, then I later became interested in chocolate making because it was part of my DNA.

I am constantly researching new flavors, new ideas and new products. It’s really very captivating and very encouraging to work on tastes, textures, visuals.
A flavor, an emotion
The flavors I enjoy most are the different ways of tasting a product: I like products that are quite straightforward. I don't like things that are "there's a certain spirit to them" because the customer won't notice it.

What also interests me is taking people on a journey through products and ideas. In fact, I create emotions that I like to feel: you need something that has taste, that has a good texture and that has a beautiful visual. Because I think we are first attracted by the eyes: we must always have this gourmet and welcoming side of a pastry.
A symbol of the chocolate factory
I have always done what I like, and I do it to the best of my ability: my goal is to share emotions and taste sensations. Share what I like, my way of working, my way of seeing things.
We have a lot of apprentices who come from far away and we teach them a trade. I like this transmission which for me is precious.
A shop in Cluses
I was looking for a store and my attention immediately fell on Cluses because I am from Marnaz. And then I realized that Cluses was becoming dynamic, getting younger and changing its image. There was a center of novelty and the city was becoming more and more lively.
One day, I was told that a store was becoming available in the city center: it was in a good location and it was a good time to go there. For me Cluses, like Sallanches, are dynamic towns. Currently, Cluses is the city that boosts the most in the sector!
