After different backgrounds, Alexis Saïfi and his sister, Djemila, met to share their passion in their father's bakery and pastry shop in Mont-Saxonnex. Their complicity and their complementarity guarantee you a treat for the pupils and the taste buds!
A family revival
Djemila: “I did my STMG baccalaureate with a specialization in management and finance. Then I worked for 2 years with my father. I then obtained my CAP in 1 year at Ferrandi in Paris. I then joined Alexis here to work with him. »
Alexis: “I did my apprenticeship here, at the bakery, with my dad. I then wanted a change of scenery and I worked for a few months in a pizzeria on the Côte d'Azur. I also worked in a pastry shop in Monaco. Then I took over the family bakery immediately afterwards. »

From creation to sharing
Djemila: “What I love about my job is to please customers. This is what gives meaning to my work: the pleasure of people. »
Alexis: “For my part, I love mixing tastes, colors, visual appearance, presentation… It's the aesthetics that attract me to my job. »

For all tastes
Djemila: “In pastry, my preference is for our cloud: it's a meringue with a creamy vanilla, a raspberry compote, a light mascarpone mousse and a raspberry coulis. »
Alexis: “Besides, do you know why we named this pastry “the cloud”? Because the locals call Mont-Saxonnex the village above the clouds. That's what inspired the name. »
Djemila and Alexis: “Our favorite is also the bescoin! »
Djemila: “We also have Bear Paws, in pastries, which is our trademark. »
The famous Bear Paw
Alexis: “The Bear Paw is our must. It was invented by my dad, Tahar Saïfi, in 1982. And its success has never wavered: it is simple and effective. It is made from leavened puff pastry, it contains a good dose of pastry cream at its heart. Its end, shaped like four toes, is covered in dark chocolate. Finally, it is sprinkled with icing sugar. People know us for that: hence our logo, hence our story.”

Why Mont-Saxonnex rather than elsewhere?
Djemila: “I like this village because I was born here. It is my favorite village. And I really appreciate the fact that everyone knows each other. »
Alexis: “I like Mont-Saxonnex for its tranquillity, its friendliness, its calm. The atmosphere is healthy here: it's a healthy place. »
